“Being the festive season we’re going to look at smoked salmon…”

Overall, fish is rich in many vital nutrients including protein, B vitamins, selenium, iodine, zinc and vitamin E. Fish such as salmon, mackerel and sardines, which are more oily, have the added benefit of being a particularly rich source of omega 3 fats and vitamins A and D.

Numerous studies have shown the role of omega 3 oils in health, including protection against heart disease, reduction of inflammation in rheumatoid arthritis and their role in the development of eyes, skin and the nervous system. There are also some studies showing the possible link between omega 3 fats and other health conditions such as inflammatory bowel disease, depression, dementia, attention deficit disorder and asthma.

Salmon, whether fresh or smoked, are rich in omega 3 oils. Smoked salmon is often a staple food over the Christmas season and what a great party food it is, packed full of nutrients.  

Marry the benefits of smoked salmon with a slice of wholegrain bread which is high in fibre and contains nutrients such as B vitamins, vitamin E and iron to give you great party nibbles or a pre-Christmas dinner starter. Add a squeeze of lemon juice and some freshly ground pepper or some sour cream and cucumber slice…delicious and nutritious.

Another way to use smoked salmon during the party season is make a paté and serve with red, green and yellow pepper slices, celery and carrot sticks to help up the vegetable intake.

Starter or festive nibble:  Smoked salmon paté

Ingredients

  • 1 tin (210gms) salmon drained
  • 200gms / 8oz low fat cream cheese
  • 1 onion chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon wholegrain mustard
  • Few drops tabasco
  • Black pepper

Place all ingredients in a food processor and process until smooth. Spoon mixture into a serving dish and refrigerate for several hours. Garnish with lemon wedges and parsley.
